Add to fruit salad, use as a shortcake filling, mix into salsas, blended drinks, cocktails or purée to create delicious dessert sauces. Eat raw or cooked. Slice, then top cereal, pudding, ice cream or pancakes. Peaches can be peeled with a paring knife or dropped into boiling water for about one minute, then refreshed with cold water and the skin slipped off. Use right away, or to prevent discoloration, rub with lemon or dip in acidulated water (cold water mixed with a little lemon or lime juice).
