Italian White Truffles, also called Piedmont Truffles (most often from the Piedmont region of Italy), are tan colored, smooth skinned with creamy white meat. They have a sweet smell and provide a mild garlic-like flavor when eaten.

    When Italian White Truffles are cooked, they lose their strong natural flavor so they are best eaten raw. However, with cooked foods, they can be cut raw into paper-thin slices to be added after the main ingredients are cooked for egg dishes such as omelets or scrambled eggs, pasta, risotto, salads, sauces, and meats.
