A very rich tasting, buttery fruit that is used only when extremely ripe (soft interior). Avocados are a very popular salad ingredient as well as a staple in Southwest cuisine in sauces and salsas.
The two most popular varietes for culinary use are the Haas and Fuerte. The Hass skin turns black as it ripens. Under refrigeration avocados will not soften and the fruit turns grey. The fruit is best stored at room temperature and used as soon as it ripens.
