Striped Baby Beets are about the size of a golf ball with edible 7" long bright green edible tops. They are sweeter and most similar in flavor to the larger red beet but milder. When sliced, the striped red and white flesh is visually spectacular.

These beauties can be prepared by steaming, microwaving, or sautéing. While they are also great for pickling, these beets make a colorful and hearty addition to soups and salads. Try adding parsley, basil, dill or chives with cooked beets to enhance any dish. The dark green tops offer a hearty flavor and can be cooked with the roots, although the root is usually more favored over the greens.
