Although they look like they were dug up from the earth, Baby Kohlrabi bulbs are really swollen stems that grow above ground. Firm stems with leaves that branch out evenly at all angles. The leaves, which taste like kale, collards or cabbage, can be steamed, boiled or added to soups. Both the leaves and stems are edible.

Tasting like a cross between cabbage and turnips, Baby Kohlrabi bulbs are flavorful and tender and have hints of radish and cucumber. Purple Kohlrabi tends to have a slightly spicier flavor then the green.
