    Its slightly sour flavor becomes quite bitter upon ripening. This bitter or quinine flavor (a bitter alkaloid) is often combined with garlic or chile peppers. Blanch or salt to reduce bitterness. Skin is edible. Bitter Melon can be stuffed, curried or pickled.
