Curly Endive has a sharp, slightly bitter flavor which enhances the flavor of green salads. The outer leaves of curly endive are dark green and lacy, enclosing a tight and pale core of leaves.
Chicory (Curly Endive)
Chicory is often confused with escarole or frise. Frisée is basically the smaller version of curly endive; escarole is a crisp, broadleaf type of chicory, that is not as bitter as Curly Endive. The darker the leaf, the more bitter it tends to be, therefore the heart has a much milder taste.
