The Black Turtle Bean is a small, black, oval shaped bean. They have an earthy, sweet flavor with a hint of mushrooms. A staple in many Mexican, Caribbean and Latin soups and side dishes.

This is a common bean in South and Central America and is popular in China where it is fermented for many uses. If cooked with other beans the color of the Black Turtle Bean will run giving the whole pot a dark color. They tend to break up when cooked, by not pre-soaking the effect is lessened.
