Elephant Garlic is actually more closely related to the leek than true garlic. The bulbs are quite large but the flavor is extremely mild.
In cooking, Elephant Garlic is not a substitute for ordinary garlic. Instead it is used where a subtle hint of garlic is wanted without overpowering the recipe it is used in. Often served raw in salads and, as with leeks, used as a flavor enhancement for soups or in any dish that needs just a hint of garlic flavor.
