A member of the sunflower family, Dandelion Greens are picked before yellow dandelion flowers develop. They have a slightly bitter taste, similar to chicory and are eaten mostly raw in salads.

    The word "dandelion" means "lion's tooth," probably a reference to its jagged leaves. They can be consumed fresh or cooked in boiling water for 10 minutes to take away some of the bitterness The slightly bitter young Dandelion Greens make a good substitute for chicory, arugula, escarole, curly endive or for cooked spinach.
