Limes

There are essentially two species of limes in common use. The large Tahitian type is known as the Bears Lime in California and the smaller Persian Lime.

    Limes add excellent flavoring to many foods. The use of lime juice and lime zest to enhance the flavor of rice, potatoes, salads, and cooked vegetables will cut down the amount of salt needed.
