Green Lychee are 1 to 2 inches in diameter and covered with a thin, protective skin which is bumpy and greenish-yellow in color, kissed with a pink blush.
Peel off the leathery skin to extract the fruit, and remove the seed. Its fragrant perfume characterizes this unique fruit. It can be eaten by itself or in salads, with vegetables and in sauces.
