Mushrooms (Chef's Mix Medley)
The daffodil-yellow flowerlike caps of the Yellow Oyster have an almost fruity aroma with a much sweeter flavor than its grey cousin that is not lost in the cooking process. Best suited as a flavoring in soups and high-heat stir fries. The Oyster mushroom has a delicate grey hue and tender texture with a very subtle sweet flavor. Shiitakes add a meaty texture and a delicious earthiness to sautés, stuffing, risotto, soups, and more. Because of their heartiness, shiitakes taste best thickly sliced or quartered, rather than chopped.
