    This unusual late ripening variety has a slightly reddish blush over a beautiful yellow skin with pale whitish dots. The deep rose red interior fruit is juicy, crisp and richly flavored, having a good balance of both sweet and tart.  Still in very limited supply, the Hidden Rose will maintain its firm texture when cooked as and makes an attractive addition to salads, sauces and pies. The variety has an extremely good shelf life.
