Red Beets are the most common and are wonderfully versatile. For the best taste, cook beets whole with 1 or 2 inches of stem intact (so that the beets do not bleed). Gently scrub and do not slice until after they have cooked. Organic Red Beets are most often times pickled or roasted and can be served hot or cold.
