Picked at an immature stage, the Cubanelle Pepper has a sweet flavor varying from warm to moderately hot. As the pepper matures the color changes to an orange-red while the heat rises but still keeps its sweetness.

    Although it can be eaten at any stage, the Cubanelle Pepper is most popular in the yellow stage.  This pepper is traditionally pickled or made into yellow mole sauces. It is excellent in traditional Latin and Italian dishes adding color to bean and rice dishes, as well as adding a bite to any soups and salads.  They may also be stuffed and fried or baked.
