Most often used in Latin dishes, Tatuma Squash is very similar to zucchini and yellow squash. It is light in flavor and tastes wonderful when added with other vegetables. It has thin spotted light green skin, is 6-8 inches in length and shaped similarly to the zucchini.
Use Tatuma Squash in casseroles, stews, or fry with other vegetables. Try a wonderful Mexican casserole known as Calabacitas with sliced Tatuma Squash, tomatoes, chopped onion and cheese. This squash is sometimes referred to as white Mexican squash.
