Stinging Nettles have green leaves and stems that are covered with small stiff hairs that inject a stinging fluid when touched. They are about 7-8 inches tall and resemble mint in appearance.
Once blanched and shocked they may be handled without gloves and they turn a brilliant green in color. Nettles are used to in pastas, pasta sauces, soups, stews, casseroles and frittatas. Their mild flavor is similar to spinach and Italian parsley.
