An aromatic perennial herb, Tarragon has a sweet licorice-like flavor adding spice to a wide variety of fresh vegetable dishes including mushrooms and asparagus. Indispensable in the preparation of béarnaise and tartar sauce.
Used widely in French cooking it is part of Fines Herbs mixture. Used in soups, added to fish, shellfish, chicken, egg dishes, green salads and salad dressings. Add tarragon vinegar to tartar sauces served with poached salmon, or to make a flavorful mayonnaise. Mix with butter and lemon to serve with most grilled fish.
